Yeah!  Pumpkin Season is Here!

Yes, it’s that time of the year again.  Leaves are changing and there is a cool crisp breeze in the air up here on the mountain top.

More importantly…it’s Pumpkin season. The best season of the year.   And if you take a peek on Pinterest you can tell that it is in full swing.

My step-daughter and I love pumpkin.  Heck, I even have a Pinterest board dedicated to all things pumpkin.  My husband doesn’t understand our obsession, but hey…we can’t all be perfect.  We love him just the way he is!  He seems to be more obsessed with football and baseball right now.

This time of the year I start experimenting to see what we can create with pumpkin puree.

This year I developed a simple recipe for yummy Pumpkin Coconut Squares.

A Quick and Easy Recipe

This recipe is really easy to make and takes me less than 10 minutes to put together.

The ingredients are:

  • Pumpkin Puree
  • Sweetened Flake Coconut
  • Quick Cooking Oats
  • White Chocolate Chips (okay, okay…so I use them in almost all my recipes)
  • Raisins
  • Sweetened Condensed MIlk
  • Egg

The pumpkin and the coconut taste delicious together in a dessert square.

Okay, okay…so I realize I use white chocolate chips a lot, but I love them.  Heck, I would put them in a roast if I could.  Hmm, I might have to think about that.  Just kidding!  Kind of…

And a few easy steps…

The most difficult part of this quick recipe will probably be not eating the white chocolate chips before you bake the squares!

Make sure you use pumpkin puree and not pumpkin pie filling.  The puree is good enough for what we are going to do.

  1. First, you will combine the dry ingredients.




2.  Second, you will mix the wet ingredients.

3.  And then you will spread those ingredients into a 9 x 13 baking dish.  Level with a spatula and then bake!  Easy peasy!

  • 1/2 cup pumpkin puree
  • 1 cup sweetened flake coconut
  • 3 cups quick cooking oats
  • 1 cup white chocolate chips
  • 1 cup raisins
  • 1 can sweetened condensed milk
  • 1 egg


  1. Preheat oven to 350 degrees F.
  2. Lightly grease a 9 x 13 casserole dish.
  3. In a large mixing bowl, use a hand mixer to mix pumpkin puree, the egg, and the sweetened condensed milk until it has a creamy consistency with no lumps.
  4. In another mixing bowl combine the oatmeal, coconut, white chocolate chips, and raisins, until the dry ingredients are evenly dispersed.
  5. Add the dry ingredients to the pumpkin sweetened condensed milk combo and mix by hand until all dry ingredients are covered.
  6. Use a spatula to scoop mixture into greased baking dishing.
  7. Spread mixture evenly to edges and pat down so the mixture is smooth.
  8. Bake at 350 degrees F for 35 minutes until golden brown.

Recipe was developed at 9000 ft, so baking time might be less at lower elevations.
